Crust:
- 2 cups Flour, sifted 250g
- ½ cup Confectioner’s Sugar 50g
- ¾ cup Unsalted Butter, melted 175g
Topping:
- 2 cups Sugar 400g
- 4 tbs Flour 29g
- 1 tsp Baking Powder 4g
- 6 tbs Lemon Juice
- 3 Eggs
Directions:
Line the bottom of 9 x 13 cake pan with parchment paper and butter the lip of the pan.
Crust: Mix ingredients together and press onto the bottom of the cake pan. Bake for 8 – 12 minutes at 350°F.
Topping: Mix ingredients together and pour over pre-baked crust and
place in the oven for another 20 to 25 minutes.
When cold, dust lightly with confectioners sugar and cut.
