*  We use in many Ground Meat recipes a mixture of ½ Beef and ½ Ground Pork. With a meat grinder at home we grind pork shoulder butts for it, which makes the taste in our opinion more delicate and reduces the cost of the meat by about 25%.

**  Please note, that many of the Pork recipes can be prepared with more expensive cuts of Veal. In our experience while catering many a times when serving pork schnitzel, people proclaimed how excellent those veal cutlets were. We never hid the fact that they were pork!

***  If a recipe calls for butter, we only use unsalted butter in our house!
